when the evenings are hot & restless and you're fancying something sweet to cleanse the pallet, i've got a perfect summer dessert that's right up your street. it's so easy and delicious and can be served in so many ways. i had mine straight out of the jar with some honey yogurt and had to stop myself from licking the jar. so here's how to do it:
you'll need
- 4 conference pears
- 2 juicy apples
- a pack of blackberries
- a pack of raspberries
- 100ml apple juice
- 60g caster sugar
- heaped tsp of cinnamon (you can add more if you wish)
peel and quarter your pears and apples and place in a large saucepan. add the blackberries, apple juice, sugar and the cinnamon. bring to a gentle simmer and cover with a lid for 10 minutes. lastly stir in the raspberries. leave to cool and serve with a good dollop of honey yogurt or you could add this to your morning breakfast, or even topped on a ready made meringue base if you're feeling lazy. the possibilities are endless with this one.
with this particular recipe i added much more apple juice to the mix, accidentally on purpose, which left me with a beautiful mixed berry fruit juice that i wasn't quite sure what to do with. i had a lightbulb moment and thought how amazing would it be preserved in alcohol?! so naturally i grabbed my preserving jar and a bottle of vodka, mixed the two and viola you've got yourself some berry infused vodka.
